I live for a good side dish, and these bang bang brussels sprouts do not disappoint. Roasted, crispy brussels sprouts drizzled with a creamy bang bang sauce made with chili garlic sauce and sweet chili sauce. The combination is so delicious!
I can’t get enough.
This dish is incredibly versatile, which enhances just how much I love it. Sure, it makes for a wonderful side dish for dinner. It’s easy. The kids love it. And it really goes with just about anything.
But! You can also make a big pan (or even two!) for a party or gathering. Or a super bowl snack.
After all, these are extremely poppable. I want to eat them right off the baking sheet – it’s hard not to.
The brussels sprouts are roasted and charred and filled with so much flavor. They also have incredible texture. Then, they are drizzled with a creamy sauce with a hint of spice. Creamy, crunchy, savory – the perfect bite.

I roast the brussels just like I normally do. Remove the stems, cut them in half or quarters, cover in olive oil, salt and pepper. I like to roast them at at least 425 degrees to give them some color and crispy charred-ness. It’s important!
The bang bang sauce is practically drinkable. I use a mix of mayo, sweet chili sauce and chili garlic paste. In Everyday Dinners, I make a bang bang salmon burger and oh my heavens, is it a complete delight. The sauce works on anything – meat, vegetables, potatoes – you name it!
That’s exactly how these sprouts are! Crunchy, crisp, flavorful and so, so addictive. You won’t be able to stop.

Ingredients
- 2 pounds brussels sprouts, stems removed and halved
- 2 tablespoons olive oil
- kosher salt and pepper
- garlic powder

- ½ cup mayonnaise
- 4 tablespoons sweet chili sauce
- 3 teaspoons chili garlic paste/sauce
- 2 green onions, thinly sliced
Instructions
- Preheat the oven to 425 degrees F.
- Spread the brussels sprouts out on a baking sheet. Drizzle with the olive oil and toss with salt, pepper and garlic powder. Toss well so every bit is coated.
- Roast for 15 minutes. Toss the brussels and roast for 10 to 15 minutes more.
- Remove and drizzle with the bang bang sauce, or use it for dipping. Serve!

- Whisk all ingredients together until smooth. Sprinkle the green onions on top of the sauce and/or the brussels.
